Wine, Spirits & Beverage Consultant Bio: Tony was born into the restaurant industry and began his career at 15-years-old working in the kitchen of his father’s restaurant. After graduating from Babson College of Entrepreneurship, where he studied Finance and Marketing, he entered his first business partnership at the age of 22. The company owned and operated four venues in the restaurant and entertainment industry, the flagship being a 61,000-square-foot entertainment complex just north of Boston, MA. He then worked for Brinker International and P.F. Chang’s, opening new locations and managing the turnaround of some of their under-performing locations. While in the Tampa, FL area, Tony reconnected with one of his former business partners and they opened 3-high- volume restaurants and lounges. Tony moved to Ft. Lauderdale, FL where he ran the beverage division for Celebrity Cruises for several years, overseeing a fleet of 11 premium ships with capacities ranging from 1,800 to 3,200 passengers. He was responsible for 900 employees and $120 million in annual revenue, increasing net profit per person by 22% during his tenure by using innovative sales ideas to grow the top line as well as bringing financial discipline to the team in order to impact the bottom line. During his time at Celebrity Cruises, the company received the Wine Spectator “Award of Excellence” (the first Cruise Line ever to do so), as well as awards for Best Industry Spirits Program and Best Industry Non-Alcoholic Beverage Program. He continues to consult in the cruise industry and helped his former employer, Celebrity Cruises, win the coveted Wine Spectator “Best of Award of Excellence” in 2019 and 2020. On the educational front, Tony was an Adjunct Professor at the International Culinary School in South Florida for 6 years, teaching classes on Food & Beverage Operations Management, Leadership & Organizational Development, Innovation & Entrepreneurship and Wine & Spirits. He has also done extensive consulting work with the Executive Team at The University of Dayton, Ohio, focusing on Organizational Structure and Process Design. Tony brings a wealth of knowledge to Matrix Restaurant Consulting - from his strong systems and financial background, to pro forma modeling and financial analysis to his industry leading knowledge of the wine & spirits industry. His consulting work spans many segments of the hospitality industry from chain restaurant groups to independent restaurants to cruise lines to resort groups. In addition, he is a Certified Specialist of Wine and a Certified Wine Educator for WSET Global.
